Step 1

It Starts With Whole Ingredients

We begin with fruit extracts, mushroom extracts, red rice, herbs, roots, seed spices — along with dates, date syrup and yeast extract as natural fermentation substrates.

​Before fermentation begins, the base goes through a standard food-grade heat step (similar to controlled boiling) to deactivate wild microbes and create a clean environment for our probiotic cultures to work.

​The result: a plant-based, dairy-free, clean-label substrate ready for fermentation.

Step 2

We Add Live Multi-Strain Probiotic Cultures

A controlled blend of food-grade probiotic bacteria is added to the brew — the only live cultures in the drink are the ones we intentionally add.

This ensures consistency from batch to batch, unlike kombucha, which uses a SCOBY (a mixed culture where exact strains and ratios may not always be known.

Step 3

Fermentation Begins

The live cultures begin breaking down the natural sugars from dates, date syrup and other plant ingredients into organic acids and flavour compounds.

Fermentation is short, guided and controlled — not left to over-acidify like kombucha.

Step 4

Natural Sugar Drops, Flavour Develops

As fermentation progresses, the sugar level decreases naturally, producing a balanced brew with depth, mild acidity and low natural sugar.

​No refined sugar is added at any point.

Step 5

Monk Fruit Adds Light Sweetness

Once fermentation is complete, a small amount of monk fruit extract is aseptically added to balance flavour.

The monk fruit is sterilised before addition, so it does not introduce new microbes or interfere with the finished brew.

Step 6

Rested, Carbonated, Bottled

After fermentation and flavour balancing, the finished brew is rested, lightly filtered, and carbonated — then filled into sanitised glass bottles.

​We choose glass because it protects flavour, does not react with the beverage, and keeps the brew stable without lining, plastics or chemical migration.

It also allows us to maintain the integrity of a live-fermented product without compromise.

​Glass does add weight in shipping and requires more care in handling, but we believe mindful packaging matters as much as mindful brewing — especially when freshness and purity are part of the experience.
